Better than Panera

Someone posted a photo of #BroccoliCheedarSoup on Facebook last night! It so happened that I made the same thing! Basically, you will know, you can basically sense it, when it is cold out, people seem to think the same, I mean mostly Moms' that love to be in the kitchen can easily think what is best to make during winter.

There was a 5 lbs. shredded cheese in the fridge, I wonder, where does this came from? Then, I realized Grandpa Jeff mentioned to me that he brought cheese that he planned to make when he was here. So I thought okay, let's make use of this cheese. I found a little bundle of fresh broccoli, just enough to add color and such! To make it proper, I would add more but, there's only the 3 of us are going to consume this.


I assembled all ingredients, started it with boiling 5 cups of water, add shredded celery, a little onions, carrots and red bell pepper and salt and pepper, bring them to a boil for about 10 minutes, then I scoped all the cooked herb and species and blend it with 1/4 cup of heavy cream for about 30 seconds. Just enough to make them creamy. I put them back in the pan with the remaining boiling water and added 2 cups of shredded cheese, simmer for a little bit and taste.

It was perfect! I purposely made extras to make sure I have more the next day.
